Creamy Vegan Alfredo

There are a lot of different recipes for Vegan Alfredo sauces. Some of them are made of cashews and other nuts, while others are made from cauliflower. I have tried a few of these recipes and came up with a mixture that was satisfyingly different but full of flavor and simple to make using the cauliflower as the main ingredient. I don't know if you have ever made mashed cauliflower, but this is pretty amazing too! I'll make that another time and share the recipe, but what I find is that the cauliflower has a garlicky taste on its own. This is important to note when adding garlic, since this becomes intensified in this sauce. Either way this is a great recipe, easy to make and works well with your blender or hand mixer. This recipe made about 4 cups, which is easily 4 generous servings. Here is what you will need:
1 head of cauliflower, chopped up
2 tbs of cashew butter
1 tbs vegan butter
1/2 cup of vegan milk ( I used soy)
1 tsp of garlic powder
3 tbs nutritional yeast
1/2 tsp salt
With your chopped cauliflower add it to a pan with water and bring to a boil. Cook until soft, about 15 minutes. Drain and add to your blender. While you are allowing it to cool a little in the blender you can begin your pasta. You can use your favorite pasta, just always be sure to make sure it is vegan and if you want gluten free that is important too. Follow the directions on your pasta and then begin working on your sauce again. Add all your ingredients to your sauce and then begin to blend. You want the sauce to be creamy so the time may vary due to your blender. If the 1/2 cup of vegan milk isn't enough just add a little bit at a time until you get the consistency you desire. Taste a bit, you can also adjust your salt if you'd like more. I generally try to limit salt and only add what I need for flavor. For an extra in my pasta I added some broccoli, I love broccoli Alfredo mix, if it's fresh just add it to your pasta the last few minutes. This will steam it perfectly. Drain your pasta and then top it with your sauce. I like a little black pepper and vegan parmesan to top it and then dinner is served. Of course you can add tofu chicken and make it a vegan chicken Alfredo, the rest is up to your creativity! Have fun and enjoy this healthier version of your Alfredo sauce!
