Power Up With Protein!

Whether you have a strenuous work day, need an extra boost for a work out, or packing a snack for a road trip these yummy delights will keep you going and keep you full. I love to use them as at work snacks on my hectic days or for hiking. They don’t need refrigeration so it’s easier to just put a container in your back pack and go! They are sweet but packed with healthier options than most bars you can get in the market. They really have become a staple in my home and the recipe is flexible with your add ins. For example sub chocolate chips with dried cranberries. Sub coconut with sliced almonds, anyways, you get the drift. You can shape them in balls or make them into bars. Really it’s up to you! I typically do the balls since it is a time saver. The recipe will yield 18-22 bite sized snacks! Hope you enjoy!
2 cups oatmeal
1cup peanut butter
1/2 cup dark chocolate chips( read package to be sure you have one that is vegan friendly)
1/2 cup coconut shredded
1/4 cup molasses
1 scoop protein powder( I use Vega vanilla)
my favorite add in is 1/4 cup of hulled hemp seeds!
Mix all your ingredients until it is evenly mixed. It should be a nice almost doughy consistency, if it seems to dry add a bit more molasses to your mix. Take a table spoon and scoop a heaping amount out and form it into a ball. Try to keep your spoonfuls consistent in size. Place them in an air tight container. If you want to store them in the fridge it does keep them fresher for longer, but if you are like me they won’t last long enough to worry about that! Enjoy!
