Simple and Healthy Mediterranean Pizza

One of my favorite dinners, and a wonderful spin on pizza is the Mediterranean pizza! This dish is great anytime. As a mom and professional I try to create dishes that don't require a huge amount of time. I'd like to have the time to make my own pizza dough, and on occasion I will, but it's so easy to get a premade pizza crust. This makes your time in the kitchen less than 30 min. Allowing you the time to give yourself a healthy home cooked meal, which is so important. You can get the individual crusts in just about any grocery store. Take a look at the ingredients list to make sure it is vegan friendly, which most of them seem to be. All you have to cook is the crust itself, which is usually about 10-15 min, depending on the brand. Just follow the instructions on the package. I like to top mine with different things, you can use chopped cucumbers, tomatoes, olives, chick peas, greens, avocado, shredded carrots- basically think of it as a salad. While you are cooking your crust you can prepare your veggies, saving loads of time. For the "sauce" use your favorite hummus.

When your crust is done take them out of the oven and transfer to a plate. This is when you will apply a layer of hummus, similar to how you would with pizza sauce. If you are going to be cutting your pizza this is the time to do it. After that layer your topping on, I start with the greens then go from there, chunkiest pieces on top. Viola! You are done! Grab your napkins and enjoy!
