Easy Potato Crisps and Vegan Melt Sandwich

I don't know about you but potatoes are a top favorite food for sure! Who doesn't love fries, baked potatoes, ect? When cooking at home I believe in keeping it simple on most days, but I want something that tastes like I slaved in the kitchen, if you know what I mean? An added bonus with making things at home is that you typically are doing half the salt and fat in your food then at a restaurant and well, it costs 1/4 of the amount so your budget is happy too! This meal is a perfect lunch or dinner for those days you are craving a hearty and hot sandwich with some fresh crisps. Here's what you will need:

Sandwich-

Rolls, choose whichever is your fave, just read the ingredients

Tofurky deli "meat" slices

Dalia shredded mozzarella

1/2 onion sliced

1 yellow chili diced

1 large bell pepper sliced

1 hand full of baby kale or spinach

1 tsp avocado oil

Potato Crisps-

3 russet potatoes cleaned and thinly sliced

1 tbs avocado oil

1/2 teaspoon of salt

dash of black pepper

sprinkle of garlic powder

Since the potatoes take a little longer to cook we will start there. Preheat your oven to 400. After you are done slicing your potatoes place them in a large bowl and add your oil and seasoning in with them and toss them around, getting them evenly coated. Place your potatoes in a layer on a cookie sheet and then place in the oven for 10-15 minutes, or until desired crispiness. When you pull them out you can top them off with a little more seasoning and allow them to cool. Don't forget you can add other spices during this process,so be creative! For your sandwich you are going to get a skillet warmed up on low heat, adding the oil first. As it heats up you begin by placing your onions and peppers in the skillet. Allow them to cook until they are a nice golden color tone. Now you can add you deli slices, I tore them in half as I added them. Turn until evening heated, then add your greens and cheese.Toss until evenly coated and the cheese melty. I do like to add some garlic powder while cooking this as well. Serve on a bun with or with or with out condiments, I added some fresh tomato slices and some vegan mayo, then added my crisps to the plate. Complete time in the kitchen

with prep is about 20 min, so not too shabby!!! Enjoy!!
