Vegan Enchilada Casserole

I don't know about you, but I love enchiladas! The only problem with them is the time it takes to roll them out and layer them accordingly. This method leaves the rolling out and layers the ingredients in more like a lasagna. Saving time but not sacrificing on flavor at all! I find this is a popular dish at family gatherings and pot lucks. Remember you can be flexible with your inner ingredients, omit what you want or add something different. I've done this recipe several different ways and it is always tasty. For this I am going to give you the list of ingredients I used this particular time. This is what you will need:

1 box of Litelife seasoned veggie meat(this is vegan and gluten free)

1 can corn, or you can use frozen corn

1 can black beans

2 smaller zucchinis cut in bite sized chunks

1/2 brown onion diced

2 large green chilies cut in slices

1 package of corn tortillas

1 package of Dalia Mozzarella shreds

2 jars Sprouts organic red enchilada sauce( or your favorite brand)

In pan on the stove add a small amount of oil and as it heats up begin by adding your chilies and onions. Allow to brown slightly then begin adding your other ingredients. The veggie meat is pre seasoned but I always add 2 tbs garlic powder, 1 tbs chili powder, 1/4 cup nutritional yeast, and 1 tsp cayenne pepper. Stir ingredients until evenly cooked. Set aside and preheat oven to 400 degrees. In casserole dish or rectangular cake pan, which is what I use, lightly oil the bottom of the pan. Place a layer of tortillas on the bottom of the pan and then add your meat mix onto the bottom layer of tortillas, sprinkle with cheese and add sauce. Begin adding your second layer of tortillas, and repeat the process. Top with lots of sauce and cheese. Now vegan cheese will melt it just melts differently. What i found is cook covered for 15 minutes and then uncovered for about 10 and it seems perfect. Of course if you need to adjust your time due to your oven or specific likes this is only a guideline. Serve topped with avocado slices, tomatoes, or refried beans, and enjoy!!
