Taco "meat" from shiitake mushrooms

Hey everyone. So I know not everyone is super into buying the pre made veggie meats. They are great in a bind or when you just want something easy, but I found that this recipe can do both. You can make it and freeze it, the dried mushrooms can be stored in your pantry until you are ready to use them, and you can have complete control of what you are putting in it as far as seasoning and salt intake goes. This isn't processed with the exception of you blending it. Plus these mushrooms are super good for you boasting cancer fighting abilities and other health benefits. On top of that, even if you aren't a mushroom fan per say, even my picky 12 year old had no problem adding this to his tacos. Here is what you will need:

2 , one oz packets of dried Shiitake mushrooms

1 table spoon low sodium soy sauce

1 tsp gluten ( omit if you are gluten free, it is a binder but not necessary)

1 tsp cayenne

1 tbs chili powder

1 tbs garlic powder

1 tsp onion powder

1 tsp smoked paprika

Start by adding your dried mushrooms to a pan of water and cook for a few minutes, around 10, just to re hydrate them. Drain and press the excess liquid out of your mushrooms and then add to a blender or food processor. Pulse it once to begin to break them up, then add your soy sauce and other dry ingredients. Pulse it until you get a meaty texture to your specific desire. You want it to be broken down similar to a ground meat, so you really don't have to do too much! This meat can be seasoned how ever you choose and is binded enough to make into a patty for veggie burgers as well. For the tacos I also like to add potatoes, my family really loves them in the taco mix and it is pretty delicious! Cook in a medium skillet for about ten minutes stirring well. Remember to use a low to medium heat or it'll burn! Fix it up like you do your tacos, I like to top mine with salsa and avocado, but really this is where you take over! Enjoy!
