"Chiken" Fajitas

There are some great meatless products out there that can add variety to your dinners with little prep time. One of my favorites to use are Gardein's meatless strips. These are the similar texture to a chicken strip with a similar visual presence and are not breaded. They are made mostly of soy, so although they can have a nice flavor, you still need to add the flavor to give it really great taste. One of my favorite ways to prepare them is as a fajita mix. Fajitas are great, healthy, and packed with favor. They are not boring at all! Here is how I created these delicious fajitas.

1/2 copped onion

2 large bell peppers sliced( the colored varieties have a sweeter flavor)

1 yellow chili sliced (sub a green chili if you'd like)

1 cup shredded cabbage (i used the purple for color)

2 cups spinach

1 package Gardein meatless strips

1 tbs avocado oil

1 tbs low sodium soy sauce

Spices- garlic powder, chili powder, cumin, cayenne, and nutritional yeast

small flour tortillas

toppings- salsa, avocado

In a large skillet, warm up on low heat the oil in the pan. When it begins to heat up add your onions and chili to the pan. Allow to brown slightly before adding any other veggies. When ready begin adding your meatless strips to your pan and add a tbs of low sodium soy sauce. These take a few minutes to begin to cook since they are frozen. As they cook you can then add your peppers and your cabbage. As you stir begin adding your seasoning. I use a generous amount of garlic, a nice sprinkle of the chili powder and cumin, a dash of cayenne, and a couple of table spoons of nutritional yeast. Stir well, allowing all the flavors to saturate together for a few minutes. The last thing to add is the spinach. Gently fold it into your mix, allowing it to cook down a bit. Don't over cook the spinach, you don't want it to get slimy! Take it off the heat and cover while you warm up your tortillas . I like to heat mine on the burner themselves, just place it on the burner for a few seconds and flip, being careful not to burn yourself or leaving it on too long and burning it. Fill your tortillas with your mix on a plate with the topping you choose and you have a super delicious dinner! With prep time you are looking at 30 min all together, so quick and easy for those busy work days. I hope you enjoy!
