Vegan Potato Soup

This easy and satisfying recipe will have you warmed up in no time! As a vegan there is always a way to create our favorite foods and make them healthier and animal free. This recipe is no exception. Now, you can either cook it in the crock pot if you need that longer span of time between stages or you can cook it in a pot on the stove. Either way it will work great and taste great! This is what you will need:
Diced potatoes, about 5
Diced onions, 1/2 of a brown onion
Diced yellow chili, 2 -or pick your favorite or omit
2 tbs of vegan butter
veggie broth
soy milk unsweetened
bacon bits- vegan
vegan cheese of your choice- I used Daiya shredded cheddar
In a crock pot you are going to place your potatoes, chilies, and onions in and fill it with the veggie broth. If you don't have enough on hand to fill it all the way up you can top it with water. Add your seasonings of choice. I always use lots of garlic, a dash of cayenne, and some black pepper. I add salt by taste preference. Turn your crock pot on high for about 4 hours. When you reach your time you will drain your liquid and replace it with soy milk and add the butter. Do add additional seasoning as needed. Allow to heat up for about an hour or so and serve topped with the vegan cheese, bacon bits, maybe even a little hot sauce. Add some crackers or tofu on the side to make it really filling!
If doing this on the stove the concept is similar but slightly different. In this instance you will begin by placing your pan on low heat. Add your butter to the pan and let it begin to melt. Once melted add your chilies and onions to the pan. Allow them to brown slightly, stirring occasionally. Once that is done you can add your potatoes and veggie broth. Again you can mix water with the broth as well. Top with your seasonings- garlic, cayenne, and black pepper and only lightly salt if you need to. Bring the pot to a boil and then turn it down to a simmer. Allow it to cook for about 30 min, you can tell if it is done if the potatoes are soft. Drain your broth and add your soy milk, season some more and heat up, stirring occasionally. When heated up well you can now serve it topped with your vegan cheese and bacon bits! Be creative! This is your dish! Top with scallions, or whatever you crave! Think of it as a loaded baked potato! I like my soup chunky but you can always mush the potatoes a bit more. You can thicken the broth with flour as well, but I find this thickens just enough for me.
