Tofu and Dumplings

We all have our favorite meals from childhood. One of my all time favorites was chicken and dumplings, so one night I decided to create my own version. Now I had some pizza dough in the fridge that I had left over from a family pizza night, and I didn’t want it to go to waste. It was a cold day so I had soup on my brain, that’s when chicken and dumplings came to mind. So I rummaged through my pantry and found some noodles left over from a pasta night, some veggie broth and thought this could be delicious! when I don’t have broth I create my own but always having broth stored in your pantry makes for a quick and flavorful soup. So I began my soup, pouring in 2 containers of veggie both and bringing to a boil. I then added my pasta. I used baked tofu, I will be posting that recipe soon, but I try to always have extra on hand for lunches and quick dinner sides. As the pasta softened I returned the pot to a medium heat and then added some veggies, for me it was some broccoli and brusel sprouts. I created some small balls with the pizza dough, using some flour so they didn’t stick to my hands, and as the soup was cooking I tossed them in. They sank at first, but as they cooked they began to float to the top. I gave them about 15 min on a soft boil and they were done. Served topped with my baked tofu and some pepper, this was truly amazing! Filling and you get that warm and cozy comfort food feeling. So next time you have some left over dough and You don’t know what to do with it, try it in a soup! Enjoy!
