Easy and Delicious Artichoke

These wonderful and delicious green goodies are a must have, not only for their nutritional value but for their wonderful taste as well. High in vitamins such as K and C, along with magnesium. These green veggies also boast 4.2 grams of protein! The problem is, how do you cook and eat these large flowers? They are actually fairly simple. All you need is a large kitchen knife, oil, and your choice of seasonings!

To prepare:

Start by cutting the stem flush with the body, then cut the flower end so it goes straight across. Now you can spread the leaves apart a bit and give it a good rinse. After you artichoke is clean you will place it in a pan with a couple inches of water at the bottom. You are going to steam it so it doesn't need to be submerged in the water just sitting in it. Now you can spread the flower apart a little and drizzle in your oil- I like to use avocado oil, then season it, I use lots of garlic and a dash of cayenne. Now you are going to cover and steam for about 20 min.

When done you can have a dipping sauce such as a melted vegan butter or a dressing( I like vegan mayo!). You peal the petals off and use your teeth to scrape off the meat on the leaves. When you get to the center use your fork to clean the thistle flower away and you have the huge chunky center which is the heart. This is the best part, you eat the whole thing! Now mind you, these guys are messy for sure! You will want a large plate since you will have a lot of pieces accumulate as you eat it, but these things are so delectable you can eat them as a meal all their own! Have fun and enjoy!
